I'm making efforts, however small, to eat healthy today. It helped a lot that Matt got up in the middle of the night and ate the rest of the cookies...haha
So I'm going to try to document my successes, and also record the healthy food finds that I discover along the way.
For breakfast I toasted up a whole wheat English Muffin (130 calories) and then microwaved an egg in a small bowl (after scrambling it) for 45 seconds. Then I shredded a bit of cheese on top of the egg, ran around it with a fork, and put it on the English muffin for a breakfast sandwich. SO easy, and only around 200 calories.
I also had my current favourite snack/meal enhancer at lunchtime, which is a homemade parfait. I take a 100g cup of yogurt and put it in a bowl, toss some blackberries on top (around 10), cover it in 1/2 a cup of corn flakes, and then sprinkle some sliced almonds and raisins on top. SO yummy, and again, around 200 calories.
The parfait could be less calories, but I tend to buy the normal yogurt that is sweetened with sugar rather than splenda because I like the taste of it better. What I'm trying to do is still eat the foods I enjoy, but eat them in smaller, but still healthy, quantities. The yogurt cups have the advantage of being individually sized, whereas if I had have bought the tub, then I'd have eaten more of it. So it works for portion control, and then I don't make the rest of my parfait accordingly too big.
Also, I was just reading some tips on reducing calories and portion controlling, and I read that if you down a big glass of water (as in, chug it back like you're in a drinking competition) right before a meal, then you'll be full faster, and have an easier time noticing the cues your stomach is trying to send your brain. I need that at this point, because my body is so accustomed to eating more than I should.
What yummy, easy snacks have you come up with that help you get through your dieting days?
Oh and the calorie thing, I don't mean that it's bad to count calories... just that I'm not doing it right now, so I have no idea how to tell you how many calories are in my breakfast. ;)
ReplyDeleteI do agree about the calorie thing, I try to eat healthy first, before I try to eat (or NOT eat...) a certain amount of calories, I just was pleasantly surprised in this case that two things that I really enjoy eating are actually low in calories! It's nice when you discover food in your diet that you like to eat that you DON'T have to cut out. Like cucumber, berries, and cheese. It makes the change that much easier to make.
ReplyDeleteI'm going to have to try your breakfast pudding (as I'm calling it now!) I'm assuming you use whole grain rice, right? I've heard amazing things about quinoa but have never actually tried it. Hmm...Maybe for dinner tonight we will!
Having a good balance of fat/carbs/protein with every snack is the only way I feel satisfied with smaller portions.

That is my favorite thing to eat for breakfast. Delish and super good for you, and if you make a batch of quinoa ahead of time, it only takes like 3 minutes to throw together (about 350 cals).
Another great breakfast (or whenever) food is this omelet (300 cal):
Spinach (steamed - I put it in a coffee mug with a little water and nuke it in the microwave for a minute).
1/4 c. feta
1/2 roma tomato
1.5 oz avocado
1 egg (whole)
2 egg whites
--- I mix the eggs together, start cooking, and add the rest of the filler ingredients. SO delish.
For low cal snacks:
Cottage cheese + fruit (I like straw/blue/blackberries) + slivered almonds.
Yoplait light yogurt + granola + fresh fruit
String cheese stick + apple + a couple of almonds
Wild rice is actually not rice at all... it's a seed from a wild grass native to North America. Anyway, it is whole grain and unbelievably yummy!!! Probably my very favorite tasting whole grain, and has lots of protein and good healthy junk.They often mix it with long grain brown rice or other grains to give it a multi-colored look, but you can find it for sale all by itself too. I don't love quinoa to be honest. The taste leaves a little to be desired, but it's super healthy and very easy, so I still use it a lot. And red quinoa? Yuck a roo. ;)
